Ma Cusson Kitchen, Pork
3/4 cup Olive oil
1/3 cup Red-wine vinegar
1/4 cup Lemon juice
1/4 cup Water
1 tbsp Dried oregano
1 tsp Salt
1 tsp Coarsely ground pepper
1/2 tsp Paprika
Mix marinade ingredients in a shallow glass baking dish, let stand for 20 minutes
Add pork, turn to coat, cover, and refrigerate overnite, turning 3 or 4 times.
Place pork on a rack in a roasting pan
pour marinade over the pork, into the roasting pan
Roast at 400F, uncovered, for 1 1/2 to 2 hours, or until thermometer registers 160F
