Perfect Cast Iron Skillet Chicken Thighs

Ingredients

  • 6-8 skin-on, bone-in chicken thighs (about 2¼ pounds)
  • 1 tablespoon vegetable oil
  • 2 Teaspoons Kosher Salt
  • 1 Teaspoon Black Pepper
  • 2 Teaspoons Garlic Powder
  • 2 Teaspoon Onion Powder
  • 2 Teaspoons Italian Seasoning
  • 1 Teaspoon Paprika

Directions

  1. Preheat oven to 475°.
  2. In a small bowl mix together the salt, pepper, garlic powder, onion powder, Italian seasoning, and paprika.
  3. Sprinkle the spices over the chicken evenly.
  4. Heat oil in a 12" cast-iron or heavy nonstick skillet over high heat until hot but not smoking.
  5. Nestle chicken in skillet, skin side down, and cook 2 minutes.
  6. Reduce heat to medium-high; continue cooking skin side down, occasionally rearranging chicken thighs and rotating pan to evenly distribute heat, until fat renders and skin is golden brown, about 12 minutes.
  7. Transfer skillet to oven and cook 13 more minutes. Flip chicken; continue cooking until skin crisps and meat is cooked through, about 5 minutes longer.
  8. Transfer to a plate; let rest 5 minutes before serving.

Notes

This actually combines the Bonappetit.com recipe with the "Crispy Baked Chicken Thighs" recipe from thesaltymarshmellow.com. The major difference is the addition of the spices other than salt.
