1 cup shortening
1 cup sugar
1 egg
1/2 cup light molasses
3/4 teaspoon vinegar
3/4 cup rich milk or light cream
3 cups sifted enriched flour
1 teaspoon cinnamon
1 teaspoon ginger
1/2 teaspoon mace
2 teaspoons baking soda
1 teaspoon salt
Cream shortening and sugar. Add egg and beat well. Add molasses and beat well.
Combine vinegar and milk/cream.
Sift flour, spices, baking soda, and salt; add alternately with milk mixture
Drop by tablespoon about 2" apart on greased cookie sheet.
Bake in 350F oven 8-10 minutes.
Makes about 6 dozen.
Mace is the spice made from the reddish seed covering (aril) of the nutmeg seed. Its flavor is similar to nutmeg but more delicate; it is used to flavor baked goods, meat, fish, vegetables and in preserving and pickling.
