Ham and Cheese Bites

Ingredients

1/4 pound ham diced

2 ounces swiss cheese grated

2 ounces sharp cheddar cheese grated

1/8 teaspoon freshly ground black pepper

1/2 teaspoon Worcestershire sauce

1/4 tablespoon hot sauce

3 tablespoons minced shallots

1/4 cup lowfat mayonnaise

1 frozen puff pastry sheet defrosted and cut in 2" squares

1 large egg beaten with

1 teaspoon water

Directions

Preheat the oven to 375ยบ F.
Line a baking sheet with parchment paper and set aside.
In a medium-size mixing bowl combine ham, cheeses, black pepper, Worcestershire,
hot sauce, shallots and mayonnaise. Mix well.
Brush 24 of the pastry squares with the beaten egg wash, then put a heaping teaspoon
of the ham and cheese mixture in the center of each square.
Top with the remaining 24 pastry squares and using your fingers, gently seal the edges together.
Put the squares on the prepared baking sheet and brush the tops with egg wash.
Bake until lightly golden brown, about 15 minutes.
Serve warm

Notes

I love these! They can be a bit of work, but the rewards make it worth the effort!
I have done this with ground beef (3/4) and ground pork (1/4) and no cheese. Takes more than 1/4 lb but less than 1 lb of meat. I usually do 3/4 lb beef and 1/4 lb pork and use the left over in a spaghetti sauce.
I skip the mayonnaise in all variations I do, but add spicy mustard when doing ground beef.
