2/3 cups grape nuts
1 cup milk
2 eggs
2/3 cup sugar
pinch of salt
1/4 teaspoon (dash) of vanilla
1 cup milk (additional)
Soak grape nuts in 1 cup of milk for 15 minutes.
Separate the eggs and beat the whites until stiff
Beat yolks with sugar, salt, and vanilla; add to soaked grape nuts
Add cup of milk stir well
Fold in beaten egg whites and stir gently until pudding is well combined
Bake in a greased casserole set in a pan with about an inch of hot water, for 1 hour at 350F
Test with butter knife, if it comes out clean the custard is done.
