Gingerbread Cookies

Ingredients

1 cup butter

1 cup firmly packed light brown sugar

1/2 cup light molasses

3 1/2 cups regular all purpose flour

1 tablespoon ginger

2 teaspoons cinnamon

1 teaspoon baking soda

Directions

In a mixing bowl cream butter; gradually add sugar and beat until light and fluffy.
Blend in molasses.
Sift together flour, ginger, cinnamon, and baking soda; gradually add to creamed mixture.
Chill dough for ease in handling.
On lightly floured surface roll dough to about 1/8' thickness
With floured cookie cutters cut into desired shapes
With wide spatula transfer to buttered baking sheet
Bake in preheated oven at 350F for 8 to 10 minutes
Let stand a few minutes before removing to wire rack to cool
