Fried Chicken

Chicken, Ma Cusson Kitchen

Ingredients

2 1/2 - 3 lbs chicken cut into parts

1/2 cup flour

1 tsp salt

1/2 tsp paprika

1/4 tsp pepper

Oil

Directions

Wash chicken and pat dry
Mix dry ingredients in a bowl and coat chicken parts
Put oil into large skillet to a depth of about 1/4" and heat on medium
Cook chicken in oil 15-20 minutes
Cover tightly and simmer for 30-40 minutes, turning chicken midway to ensure even cooking
Remove cover for the final 5 minutes to crisp chicken
Drain on paper towels

Notes

Traditionally, lard is used to fry the chicken, but corn oil, peanut oil, canola oil, soybean oil, or other vegetable oils are also frequently used.

The moisture from the chicken that sticks and browns on the bottom of the pan become the basis to make gravy.
