1. Preheat your oven to 425 F degrees.
2. Toss the potatoes with the olive oil, garlic, thyme, rosemary, salt, and pepper
3. Line a baking sheet with aluminum foil, place coated potatoes cut side down
4. Bake for 20 to 25 minutes, or until crispy. Garnish with parsley and serve.
