Fingerling Potatoes

Ingredients

  • 1 1/2 lbs fingerling potatoes sliced in half lengthwise
  • 2 tbsp olive oil (more if needed)
  • 3 cloves garlic minced
  • 1 tbsp fresh thyme (chopped)
  • 1 tbsp fresh rosemary (chopped)
  • 1/2 tsp salt
  • 1/2 tsp pepper

Directions

1. Preheat your oven to 425 F degrees.
2. Toss the potatoes with the olive oil, garlic, thyme, rosemary, salt, and pepper
3. Line a baking sheet with aluminum foil, place coated potatoes cut side down
4. Bake for 20 to 25 minutes, or until crispy. Garnish with parsley and serve.

Notes

  • Cook these while your Prime Rib Roast is resting
  • I use minimum olive oil required to lightly coat the potatoes.
  • 400F 30 minutes
