Clam Chowder

Ingredients

3 Tbs diced salt pork or 3 slices bacon

1/4 cup chopped onion

2 cups diced potatoes

1 8oz bottle clam juice

2 6 1/2 oz cans Snow's chopped or minced clams

1/8 tsp thyme

1 1/2 cups half & half

Description

From Snow's Chopped Clams (now Bumble Bee)

Directions

(My copy of this recipe was incomplete, so I improvised a bit)

Scald salt pork with boiling water (10 minutes)
Brown salt pork (or bacon) and add onion, cook until tender remove from heat
In a large pot Boil potatoes until just tender (if you used clam juice do not drain and skip next step)
Drain potatoes and add all clam juice
Add clams, half & half and thyme
Heat through, but do not bring to a boil.
Serve with Oyster Crackers.

Notes

I like to use clam juice (the bottle and from the cans of clams) to boil the potatoes for additional flavor
