Place chicken wings in bowl, add salt, cornstarch, and backing power. Toss to until wings are coated and minimal dry ingredients are left in the bowl.
Place chicken wings on a wire rack inside a cookie sheet and place in fridge overnight
The next day remove chicken wings from fridge and preheat oven to 450F on convection setting.
Toss the wings in the oil. Now is probably the time to toss some in the salt and vinegar seasoning.
Bake the wings for 20 minutes, flip them and back for another 20-30 minutes or until a nice golden brown. The wings should look like they've been fried.
Put cooked wings in bowl and toss with sauce.
1 - 1 1/2 teaspoons baking powder per pound of wings.
